Recipe of the Day: Bacon, Potato and Egg Casserole

I just got this in an email from Brookshires and wanted to share it with you all that enjoys eating as I do.
Servings:6
Preparation Time:15 minutes
Cook Time:40 minutes
You can make this bacon, potato and egg casserole for breakfast, dinner or brunch.
Ingredients

Directions
Heat the oven to 350°F. Lightly grease a 13x9 inch baking dish with baking spray or olive oil.
Put the bacon slices in a large skillet and turn the heat on to medium. Cook the bacon, stirring occasionally, until it is crisp. Add the onion, yellow bell pepper, garlic, sun-dried tomatoes, and 1 teaspoon of salt, and cook over medium heat until all the vegetables are fragrant and soft — about 5 more minutes. Turn off the heat and let cool slightly.
In a separate bowl, beat the eggs thoroughly and whisk in the milk. Whisk in the remaining teaspoon of salt, and the black pepper. Stir in the cheese, frozen potatoes, and the bacon and vegetables from the skillet. Pour the whole mixture into the prepared baking dish. (At this point the casserole can be covered and refrigerated for up to 24 hours.)
When you are ready to bake the casserole, bake for 40 minutes, or until the eggs are firm and the top is slightly golden. A knife inserted in the center should come out clean.

DIY.. How to BBQ or Grill a Whole Turkey | Meal Plan

Are you planning your great Christmas Feast this year? Well I am and I started practicing on Thanksgiving. As many of you know I don't normally cook for Thanksgiving but due to the fact I had found some new yummy recipes I cooked. So this is my Meal Plan Operation Christmas! 

How To Barbecue or Grill A Whole Turkey

BBQ Grilled Turkey



Ingredients:
1 (15 to 20 pound) turkey, fresh or thawed, with giblets and neck removed.
1/2 cup butter, room temperature or softened and  divided, Salt and pepper, garlic, onions and lemons.



Preparation:

1. Preheat barbecue grill. 

2. Wash and pat dry turkey, rub with butter and season with Salt, pepper and other seasonings of choice. Rub the inside cavity of the turkey with 1/2 of the softened butter. Stuff with garlic, onions and 1-2 Lemons.
 
3. use 25 briquettes on each side of the pan for the first hour of grilling and add 8 briquettes to each side every hour to maintain heat.  

4. Make sure you follow step 3 every hour or the charcoal will go out... if you have a grill like the one I used above you will need a little help to this. I had to lift the rack by hand (make sure you have hot pads!!!) and have some restock the coals. 

Try to resist peeking under the lid too often. Every time you open your barbecue you will loose heat, and the cooking process will take longer. During the roasting process you control the temperature inside the barbecue by gradually opening or closing the bottom vent holes. Mind you: the top vent holes will ALWAYS remain fully open during roasting and smoking. During roasting, you should see only a whips of light Hot Smoke coming from your barbecue. 

5. After 3 hours of cooking check the temp to see if finished. I happen to use the thermometer that came in the turkey this year and it came out perfect.

Left over Turkey? Meal Plan Monday | 26 November 2012



Happy Monday Everyone... I hope your all hungry and ready to Meal Plan.  If you are a follower of Crazy Texas Saving you would know that I have started juicing. The new series is Juicing on a Budget and its for everyone that has been wanting to juice or curious about juicing.

So how was every ones Thanksgiving? Mine was very peaceful.... it was just out little family of 4 and lots of food that we ate all weekend until yesterday. Now we will be starting off fresh with some new food. 

Monday- Neck Bones with Rice




 
Tuesday- Pot Roast and Mash Potatoes




 
Wednesday- Left overs!!!!

Thursday- Layered Chicken Tamale Bake



Friday- Turkey Pot Pie ( left over turkey from Thanksgiving)




Saturday- Work Christmas party!

Sunday- Take out Sunday... maybe :)
